 Chocolate Cake / Muffins


1 cup cocoa powder (sifted)

2 cups all-purpose flour

1 ½ cups sugar

1 tea-spoon baking powder

½ tea-spoon baking soda

2 eggs

 1 cup oil

½ cup heavy cream

½ cup bitter-sweet chocolate morsels


  • mix together eggs and oil
  • mix all the dry ingredients
  • combine both mixtures
  • add hot water and mix until well combined
  • pour into a 10” baking pan and bake at 350 F for about 45 minutes
  • melt together the heavy cream and chocolate morsels over a medium heat and pour over the warm cake
